'Grandma Found the Rum' Pina Colada
Incase you didn't hear this past Wednesday, July 10th was National Pina Colada Day.
Traditional pina coladas have a 3:1:1 ratio of 3 parts pineapple juice, 1 part coconut milk, and 1 part rum;.... I dunno about you, but I tend to be a little heavier handed on my pours and prefer to have a bigger boozier kick to my drinks. So incase you weren't able to celebrate, but would like to soon, I am sharing my recipe for my pina colada which I am calling 'Grandma Found the Rum' Pina Colada.
You will need:
-1 (6oz) can Pineapple juice
-1 (6oz or whatever size you are able to find) coconut milk
-Some white rum
-Core your pineapple! Chop the top off (but do not discard) and core as far down as you can without busting through the sides. If you do not have a pineapple corer, go to the grocery and find one, it's so worth it and they are inexpensive.
-Set the pineapple pieces aside, you will use them in a sec.
-Grab your blender! Fill with about 16oz of ice (roughly a pint glass worth of ice) and add:
-- 3 jiggers of pineapple juice
-- 1 jigger of coconut milk
-- 2 jiggers of white rum
-- Finally add a handfull of your fresh pineapple pieces. *This is to taste, so just do what feels right.
Blend till smooth.
-Pour your pina colada into your nifty pineapple cup (you will have more than your pineapple can hold..... oh no! opps :) guess you will have to drink the extra right away.... or put into the freezer for your refill.
-Use pineapple top section that was cut off as a lid to help keep your pina colada cold and with either a metal or glass straw punch a hole right thru. *Punch the hole on a cutting board or stable surface- you might otherwise crush your pineapple and subsequently send your boozy cocktail all over your counter and kitchen floor....
Congratulations!!!! You are now the fanciest grandma drinking booze out of a fucking pineapple! And I guarantee if one sip does not transport you to the tropical island of your dreams,
